Cardo was opened in 2006 as Pig'Halle Restaurant with the South Street entrance and Duo Pizzaria in the Princes street entrance. Herve and Paula have kept to their core values of using fresh, locally sourced, ingredients but the two restaurants have been simplified into one more contemporary and more Mediterranean with more influence from Paula's portuguese and Herve's french backgrounds.

The name Cardo is Italian for 'Thistle'. We chose it to celebrate the flower of Scotland, the country where we have discovered so many ingredients that we use our Mediterranean stye. The name of our Macaron business, Chardon, is from the French for Thistle.
The new interior was designed by Michael Dix of Dix Designs. Much of the furniture was sourced in the Far East. The pendulant lamps, with their gorgeous pattination, are from a Japanese trawler, rescued by Michael from a junk yard. The thistle themed artworks cvering the walls are also by Michael.
